About this item
Thick white tail cuts with firm skin and a generous amount of natural gelatin, so slow simmering turns the broth rich and creamy. Trimmed, cleaned and portioned before freezing, they skip the gutting and cutting stage entirely and go straight into the pot. The skin holds the meat together through long cooking and thickens the sauce naturally, so a slow braise needs no extra thickener.

- Thick, dense white meat under firm fish skin
- Gelatin-rich, producing a full-bodied broth
